The concept behind this coffee began in 2013, when we first stumbled upon a nearby abandoned chocolate plantation, and gathered enough cacao to try our first fermentation. We quickly realized that properly fermenting cacao is both complicated and heavily reliant on circumstances that weren't in our favor (having a large mass of beans, fermenting at lower elevations, etc). Despite the rough fermentation, the roasted, wild-harvested Hawaiian cacao smelled amazing: deep, floral, strong, and creamy. Instead of trying to conch, temper and consume 20 pounds of astringent cacao, we opted to stash the fragrant mass in a burlap bag of green Puna coffee.

The roasted cacao (Theobroma cacao) and green coffee cured together for a series of months before we separated the two and roasted the coffee alone. The outcome was a Hawaiian coffee with exquisite hints of dark chocolate, cocoa powder, nut butter and red wine mingling with the floral, sandalwood character of our Puna coffee. The suffusion works because green coffee is porous and absorbent; it's been known to soak in aromas from wine barrels, cement floors, gas stations and now, cacao.

And so began the annual tradition, and popular seasonal item, which has both helped us improve our cacao fermentation techniques and create a new product in our line of Hawaiian coffees. We hope you enjoy this limited, seasonal coffee. Try it in your french press, espresso machine, mokka pot, or Aeropress for best results.
